Pumpkin Chocolate Chip Cookies

Hey Guys!

I mentioned in a recent post that I made Pumpkin Chocolate Chip Cookies (*Photo to come!*).  These are the absolute perfect fall cookie!  They are super soft and taste even better the second day.

I’m not going to lie, the first time I made these something about the texture had me worried that they might not turn out well.  I also didn’t think the dough would make very many cookies, maybe only a cookie sheet full, if that.  But surprise, surprise, they made the perfect amount and turned out great!  And an added bonus, the cookie dough can be kept in the fridge for up to three days, which I took advantage of for portion control – I was sure if I made the whole batch Mikey and I wouldn’t be able to stop!

Currently – October Edition

This seems to be the one post I can keep up on, but hey, it’s something right?!   We are already half way through October and I’m running to keep up.  This weekend was our annual trip to Green Bluff!  What is Green Bluff you ask?  Well my dears, it’s a magical place.  No, just kidding…sort of.  It’s outside of Spokane in the country where you can find all sorts of adorable farms and where you can go to pick your own apples, pumpkins, peaches, cherries (all within the right season of course).  Quite a few have little gift shops, and vendors come to sell their homemade goods.   Our favorite place makes these fresh, hot pumpkin donuts.  They are a-m-a-z-i-n-g!  And we always leave with at least one gallon of apple cider.  It’s our must-do for fall.  Hopefully next time I will remember to take some pictures.  If you have a place like this around your town/city, I highly recommend checking it out!

Currently Watching

“Bones”.  More like re-watching and catching up.  Mikey and I binge watched this during our first year of marriage.  I don’t know why, but we always seemed to start it during dinner, which is the absolute worst time to watch it.  Talk about some gory stuff!  We also would watch it late at night too and I always fell asleep, so I was really looking forward to re-watching it to see everything I missed.  You want to know what happened?  I fell asleep the first night we started! *sigh*

Currently Reading

“Harry Potter and the Goblet of Fire” by J.K. Rowling,  “A Woman’s Walk with God – Growing in the Fruit of the Spirit” by Elizabeth George, and “Better than Before” by Gretchen Rubin.  Quite the combination, right?  I’m actually having a hard time getting through the 4th Harry Potter book, but I’m not sure why.  I suppose it doesn’t help that I haven’t had much time, and it might also be the fact that I’m reading 2 other books.

I have to say though, reading “A Woman’s Walk with God” and “Better than Before” has been really interesting to read together.  One is clearly a Christian book by a Christian author, and the other is not, but one is talking about the fruit of the Spirit and putting certain things into practice and the other is talking about habits themselves, so they have been going so well together.  I might write a post on these 2 books alone, so I won’t keep rambling, I just wanted to point out that it’s been a nice surprise.

Currently Making/Baking

Pumpkin Chocolate Chip Cookies – OH MY GOSH, these are delicious!  They are super soft, and believe it or not, taste better after the first day.  You can’t go wrong.  I will definitely be sharing the recipe.

Current Obsession

“Spice Pumpkin Pie” wax cubes by Better Homes & Gardens.  Our little apartment couldn’t smell more like fall right now.  You can find candle wax warmers at Walmart, Fred Myer, or Target for a decent price.  I wanted a fall smelling one that wasn’t too strong, this one turned out perfect.  Coming home never smelled better.  :)

Currently – September Edition

Happy September!!  I can’t believe this summer is practically gone!  I’m usually a little sad when I turn the Calendar and say goodbye to August, but this year, I seem to be ok with it.

Since I took yet another 2 month break (I know, I know, I honestly thought I would be doing better at this), I decided to break my silence with another Currently Edition.  So here we go!

Currently Watching:

“When Calls the Heart”.  Thank you Netflix!  And thank you Hallmark for making such a happy, only slightly cheesy, tv show.  There is only 1 season, so that’s a little sad, but hopefully there will be more.  If you liked Downton Abbey, I have a feeling you would like this.  Go check it out!

Also, Rizzoli & Isles is still going, so that keeps me happy on Tuesday nights.

Currently Reading:

Harry Potter Book 3…actually 4.  I literally have just a couple pages left and I’m done with 3.  I realized I left book 4 in my drawer at work as soon as I got home.  Gah!  Good thing I can grab it tomorrow.  Love the books!  Obviously they are better than the movies, but I still can’t get over how well done the movies are.

Currently Making/Baking:

Tomato Basil Pasta.  Look it up on Pinterest (I might also try and post it on here sometime)!  Super Easy, it’s one of those one-pot meals and takes about 20 minutes to make, probably less.  It doesn’t call for it, but I add Italian Sausage to give it a little protein (in which case turns it into a 2 pot meal).

Current Obsession:

In my June “Currently” post, I mentioned I was obsessed with looking at cruise vacations.  Well…we ended up booking one and I’m SUPER excited!  I have everything planned as much as I can right now, just waiting until it gets closer to our travel dates to book our flights and hotel and what not.  So yeah, that obsession is still going strong.

Anywhosies – Speaking of that Tomato Basil Pasta, I need to get cracking on that.

Currently – June Edition

It’s Sunday and I can’t believe the weekend is almost over!  It’s turned out to be a pretty fun weekend.

First, my husband, Mikey and I did a little clothes shopping (I love that I married a guy who likes to shop as much as I do.  And score!! I found a $6 skirt and a really cute pair of royal blue shorts, also for $6), followed by a Costco Shopping trip, followed by an evening of reading.

Saturday I had a spontaneous coffee date with one of my best friends and her little baby, followed by going out to dinner and hitting the bookstore where Mikey found a great deal on some books.

Because I find these kind of posts interesting, here is my overall June Currently’s.

Currently Watching:

~ Rizzoli & Isles – I’m SO happy this show was not cancelled!  The previous season was really short and we were thinking it might be their last since they had been last to get picked up, but so happy a new season has started.

Forever – I am sad to see it go.

Currently Reading:

~ Harry Potter, Book 1.

Currently Making/Baking:

~ Spicy Dr. Pepper pork roast. (yummy, yummy!)

~ I am also going to bake some chocolate chip cookies.  I have the ingredients and a mean sweet tooth today.  ; )

Current Obsession:  

~ Looking at cruise vacations.  I said so in my FAQ page, but I once had a 2 month long obsession with planning a Disney World vacation. Well…this time it’s cruising.  What makes this worse, is that this vacation is actually doable, we just have to wait until 2016.  So needless to day I’ve spent hours researching, and planning, and day dreaming, and wishing, and hoping, and…well…I’ll stop there.

There you have it, my dears.  Now I am off to go do my workout and then to call my dad to wish him a happy Father’s Day.

Summer Reading List 2015

I’m a little behind on my summer reading list this year, but since we’re still in June I think I’m good.  : )

Here goes my summer reading list.

1. The Harry Potter Series. – And there you have it my dears!  Haha, since there are so many books in the series I’m assuming it’s going to take me all summer long and maybe then some.  (and yes, I know I’m an adult, but I’ve seen the movies so many times that it’s just time I read the books.  Everyone knows that books are better than the movies.  ; )

~ But don’t worry, I won’t leave you hanging with just one series on my list, here are some others I’m including.  These are in no particular order.

2. The Language of Flowers – by Vanessa Diffenbaugh

4. The Bailey Flanigan Series – by Karen Kingsbury. I’ve read book 1, but I have yet to read the rest

3. My Life in France – by Julia Child

5. You Learn by Living – by Eleanor Roosevelt

There are more books on my list but I’m going to stick with this for now and probably do a follow up in fall.

Anywho, speaking of reading, I think that’s what I’m going to do now.
